淡淡的清香 --- 柠檬小戚风

~我用来烘小戚风的模~

柠檬戚风是我这星期的baking to-do-list之一, 今天刚好看见东东家的戚风,就直接用了那食谱。开始还担心酸味会很浓,因为在烘烤时一直飘来那柠檬的清香味。出炉倒扣,待凉时还在担心那味道不知会怎么样。等啊~等啊~ 终于可以吃了!! 这柠檬戚风很好吃耶。。呵呵!! 没有我想像那酸酸的味道,戚风很柔软,边咬边嗅到那淡淡的柠檬清香。虽然没有戚风模,但是这个戚风烘得很漂亮,颜色和口感都很赞。值得一试。。^_^

材料:
A)蛋黃3個, 細砂糖30g
B)牛奶40ml,沙拉油55ml,檸檬汁25ml,檸檬皮末1/2個
C)低筋麵粉90g,泡打粉2g
D)蛋白4個,細砂糖40g,鹽少許

做法:
1)烤箱預熱180度C 10分鐘, C的粉類先過篩兩次備用.
2)將A的蛋黃放料理盆中, 糖分2~3次加入拌打均勻, 此部份用手動打蛋器即可, 勿過份混合使蛋 黃太發。
3)將B的沙拉油慢慢倒入蛋黃糊中混合均勻, 再加入檸檬汁及皮末混合均勻。
4)將過篩的C篩入上述蛋糊中,混合均勻即可, 勿過份攪拌。
5)加入一些糖至D的蛋白中, 用電動打蛋器打發至起泡狀, 再加入糖繼續打,糖分2~3次加入,打發至打蛋器拿起時蛋白流下來可以堆成小山狀不會馬上融入, 不需打至太乾。
6)先將一部份的蛋白霜加入麵糊中先混合均勻, 再分部份蛋白霜入麵糊中拌勻, 最後再將所有蛋 白霜加入拌勻。
7) 將麵糊填入中空模,表面抹平後重敲一下使氣泡跑出來就可以入烤箱烤囉!

your little cute chiffon definitely look better than mine. Can I have a look of this small cute chiffon pan, the chiffon easily to remove the pan? If yes, I also want to buy few to try out mini chiffon..

Sonia, thanks for you nice words. I had posted the small chiffon pan up here. Actually i am not sure if this is a chiffon pan, but i use it this way. Honestly the mini chiffon is not easy to remove from the pan due to the small spaces. I prefer using the muffin pan instead if wana to bake in small size. Actually i make the chiffon using those small pan because i don't have a proper chiffon mould here.. hehe..

Hi, welcome! and glad that you love it here..
I remove the chiffon by small spoon/knife using by my daughter, and sometimes i do it by just using a toothpick..^^
